What is this ingredient?
Turmeric (Curcuma longa), also called yellow root, is the bright yellow powder that gives curry its color. Fresh, it resembles a smaller ginger root with a bright orange interior. What makes turmeric unique is its paradox: its characteristic compound curcumin makes up only 3-5% and is barely absorbed by your gut. Only when combined with piperine (from black pepper) and a fat source does absorption increase up to 20x.
