Instructions
- 1 Cook the lentils according to package directions in plenty of salted water until tender but still firm (about 20 minutes). Drain and set aside.
- 2 Brush the eggplant slices with half the olive oil and fry in a hot pan for 3-4 minutes per side until golden brown and soft. Remove from pan and set aside.
