Instructions
- 1 Preheat the oven to 200°C. Cut the sweet potato into even cubes, the beetroot into wedges and the broccoli into florets.
- 2 Spread the sweet potato, beetroot, broccoli and patted-dry chickpeas over a parchment-lined baking sheet. Toss with 20 ml olive oil, cumin, cayenne pepper, half the sea salt and the black pepper. Roast in a single layer for 25 minutes, tossing halfway.
