  • Now at its best: Pumpkin

Creamy fudge based on coconut cream and pumpkin puree, spiced with turmeric, cinnamon and ginger. Sweetened with honey and sprinkled with pumpkin seeds. Without grains, dairy, nuts or eggs — a paleo-friendly treat that melts on your tongue.

It is really more candy than cake, this fudge. You mix coconut cream with pumpkin puree — that orange colour alone — and then the melted coconut oil that makes everything silky smooth. Turmeric goes in, and suddenly you have something that looks like gold. Cinnamon and ginger give that warmth you know from pumpkin spice, but subtler, with a pinch of black pepper as a full stop at the end. Vanilla, honey, sea salt. You pour it into a small baking tin, press the pumpkin seeds in so they half-sink into the surface. The freezer does the rest: after three hours you cut it into cubes that are firm enough to pick up but turn soft in your mouth. Twelve pieces, and they are exactly the kind of thing you grab from the fridge in the evening when you want something sweet without it being heavy.

Nutritional Synergies

This recipe combines ingredients that enhance each other:

Synergy
Ginger Ginger Honey Honey

Classic combination: warming herbal drink with honey

Technical: Ginger's gingerol modulates COX-2 and has antiemetic action (suppresses nausea via 5-HT3 receptor blockade). Honey's glucose oxidase produces hydrogen peroxide with bioactive action, while honey physically coats and soothes the throat. Together: bioactive modulation + throat protection.

What does this mean for you? Ginger tea with honey is a classic, warming combination. The ginger provides gingerol, the honey a smooth, sweet layer.

Synergy
Cinnamon Cinnamon Honey Honey

Traditional warm combination of cinnamon and honey

Technical: Cinnamon contains cinnamaldehyde and proanthocyanidins with bioactive action via cell wall disruption. Honey's glucose oxidase produces hydrogen peroxide with bioactive action, while honey's high viscosity forms a physical barrier. Two independent bioactive mechanisms that work more broadly together.

What does this mean for you? Cinnamon + honey in warm tea — a classic combination. Both have bioactive action via different pathways — broader together than alone.

Absorption
Coconut Cream Coconut Cream Turmeric Turmeric

Coconut fat significantly increases curcumin absorption

Technical: Curcumin is fat-soluble with low bioavailability (<1%) in aqueous solution. Coconut cream contains 34% fat (of which 50% lauric acid), forming lipid micelles that transport curcumin through the intestinal wall. The higher fat content of cream versus milk makes this even more effective.

What does this mean for you? Use coconut cream instead of coconut milk for golden milk or curry with turmeric — the extra fat ensures better absorption of curcumin.

Synergy
Coconut Oil Coconut Oil Honey Honey

MCTs protect honey enzymes — complementary bioactive compounds

Technical: Coconut oil contains lauric acid (48%), a medium-chain fatty acid (MCT). Honey contains glucose oxidase producing hydrogen peroxide. Together they provide complementary bioactive compounds. MCTs also help preserve fat-soluble compounds in honey.

What does this mean for you? Combine coconut oil with honey in energy balls, granola or as coating for snacks. The combination is both flavorful and functional.

Absorption 3×
Coconut Oil Coconut Oil Turmeric Turmeric

Improves absorption because curcumin is fat-soluble

Technical: Curcumin is fat-soluble and must be bound to fat to pass through the intestinal wall — without fat, bioavailability is only ~1%. Coconut oil contains 60% MCTs (medium-chain triglycerides) that are absorbed very quickly and effectively carry curcumin through the gut wall. The lauric acid component (48%) works via a complementary biochemical pathway.

What does this mean for you? Add a teaspoon of coconut oil to your turmeric milk, curry or smoothie. Coconut oil is one of the best 'carriers' for curcumin thanks to rapid MCT absorption. Don't forget black pepper for an extra 2000% absorption boost.

Complementary
Turmeric Turmeric Ginger Ginger

Enhanced bioactive action via two pathways

Technical: Turmeric and ginger belong to the same plant family (Zingiberaceae). Curcumin (turmeric) modulates NF-kB, while gingerol (ginger) modulates COX-2 and LOX (lipoxygenase). Because they target different signaling pathways, they enhance each other's bioactive action.

What does this mean for you? Turmeric + ginger in curry, soup or tea — two related spices that work bioactively via different pathways. Broader together than alone.

Absorption 20×
Turmeric Turmeric Black Pepper Black Pepper

Increases curcumin absorption by 2000%

Technical: Curcumin from turmeric has bioavailability below 1% due to rapid glucuronidation in the liver. Piperine from black pepper inhibits UGT (UDP-glucuronosyltransferase) and CYP3A4, preventing curcumin breakdown. This increases bioavailability by 2000% (20x). Use ratio ¼ teaspoon pepper to 1 teaspoon turmeric.

What does this mean for you? ALWAYS add black pepper when using turmeric. Without pepper your body absorbs virtually nothing — with pepper 20x more. This is the most important food synergy there is.

Synergy
Pumpkin Pumpkin Cinnamon Cinnamon

Beta-carotene + cinnamaldehyde: provitamin A and GLUT4 modulation

Technical: Pumpkin contains 3100μg beta-carotene per 100g — provitamin A contributing to normal immune system function (EFSA-approved) — and resistant fibers. Cinnamon's cinnamaldehyde modulates GLUT4 translocation and influences glycemic response. Together they provide provitamin A and glycemic modulation.

What does this mean for you? Pumpkin soup with cinnamon is an autumn classic. Cinnamon influences the glycemic response of pumpkin's carbohydrates. Add olive oil for beta-carotene absorption — it's fat-soluble.

Synergy
Vanilla Extract Vanilla Extract Honey Honey

Vanillin antioxidant + honey enzymes for aroma and well-being

Technical: Vanilla extract contains vanillin (1-2%) — a powerful antioxidant 5x stronger than vitamin C in DPPH assay. Vanillin also has anxiolytic action via GABA-A receptor modulation and inhibits MAO-B (mood improvement). Honey's enzymes and prebiotic FOS enhance the well-being effect: gut bacteria produce 90% of serotonin. The combination is aromatic (vanillin + honey flavors) and therapeutic (antioxidant + prebiotic + anxiolytic).

What does this mean for you? Add a few drops of real vanilla extract to warm honey milk or tea. The vanilla calms your nervous system, the honey feeds your gut bacteria that produce serotonin — comfort food at a molecular level.

Stress ReliefSleep

Synergy
Vanilla Extract Vanilla Extract Cinnamon Cinnamon

Vanillin + cinnamaldehyde reduce sugar craving

Technical: Vanillin activates sweet receptors (T1R2/T1R3) without providing calories, increasing perceived sweetness of dishes by 30-40%. Cinnamon's cinnamaldehyde activates AMPK and supports glucose uptake in cells, biochemically reducing sugar cravings. Together they lower the need for added sugar: vanilla makes sweeter (sensory), cinnamon supports glucose balance (metabolic).

What does this mean for you? Add vanilla extract + cinnamon to your coffee, oatmeal or yogurt instead of sugar. Your brain experiences sweetness but your glucose balance stays stable — the smartest way to eat less sugar.
