chicken breast — 500 g cut into 2 cm cubes, halal -
chicken stock — 500 ml preferably homemade or low-sodium -
mushrooms — 200 g sliced -
carrots — 2 pcs finely diced
Instructions
- 1 Peel the potatoes and cut them into even pieces. Boil in salted water for about 20 minutes until tender. Drain, let steam dry briefly and mash with 30 g butter and warm milk until creamy. Season with salt, pepper and a little nutmeg. Keep warm with a lid on.
- 2 Bring the chicken stock with the bay leaf just to a boil. Add the chicken cubes, lower the heat and poach for 10-12 minutes until just cooked through. Remove the chicken with a slotted spoon and reserve the stock. Discard the bay leaf.
