Nutritional Synergies

This recipe combines ingredients that enhance each other:

Absorption 4×
Fine bulgur Fine bulgur Fresh parsley Fresh parsley

Tabbouleh: vitamin C increases iron absorption from bulgur

Technical: Bulgur contains 2.5mg iron per 100g (non-heme). Parsley contains 133mg vitamin C per 100g — more than lemons! In traditional tabbouleh, parsley is the main ingredient (not bulgur), ensuring optimal iron absorption. Parsley also contains vitamin K and folate.

What does this mean for you? Make tabbouleh with LOTS of parsley — traditionally it's 3-4 bunches per cup of bulgur. This is not only authentic but also nutritionally optimal.

Fat activates volatile oils and increases cuminaldehyde absorption

Technical: Cumin's active compounds (cuminaldehyde, cymene, terpinene) are volatile, fat-soluble compounds. Frying in olive oil extracts and stabilizes these compounds, and the fat improves their gut absorption.

What does this mean for you? Briefly fry cumin in olive oil before adding other ingredients (tadka/tempering). This is why Indian and Middle Eastern cuisines always fry cumin in oil.

Paprika Paprika Olive oil Olive oil

3x better carotenoid absorption with fats

Technical: Paprika powder is extremely rich in carotenoids: beta-carotene, capsanthin and cryptoxanthin. These are all fat-soluble with only 5-10% absorption without fat. Olive oil or butter create micelles increasing absorption up to 3x. Additionally, vitamin E from olive oil protects carotenoids from oxidation.

What does this mean for you? Always briefly fry paprika powder in oil or butter before adding liquid. This activates the color and increases vitamin absorption up to 3x — the basis of Hungarian goulash.

Romaine lettuce Romaine lettuce Olive oil Olive oil

7x better carotenoid absorption with fats

Technical: Lettuce contains 1223μg beta-carotene and 1730μg lutein per 100g. Without fat only 3% is absorbed. A Purdue University study (2012, Molecular Nutrition & Food Research) showed olive oil or avocado increases absorption to 20%+ — a 7-fold improvement.

What does this mean for you? Always eat salad with olive oil dressing or avocado. Without fat you absorb almost nothing of the carotenoids. A dry salad without dressing is ironically less nutritious than one with a good olive oil dressing.

Absorption 4×
Tomato paste Tomato paste Olive oil Olive oil

Up to 4x more lycopene absorption through heating in oil

Technical: Tomato paste is 6x more concentrated than fresh tomato, making lycopene content very high. Heating has already released lycopene from cell walls (cis-isomer, better absorbable). Olive oil fats form micelles that efficiently transport this released lycopene through the gut wall — absorption increases up to 4x.

What does this mean for you? Always briefly fry tomato paste in olive oil before adding other ingredients. This maximizes lycopene absorption — the quintessential Italian cooking method.
