Rich, creamy rendang with fermented tempeh slowly braised in coconut milk with turmeric, lemongrass, galangal and red chili. Served on brown rice for a heartwarming vegan dish.

The spice paste — onion, garlic, red chili, turmeric and pepper pounded in the mortar — sizzles for three minutes in the hot pan until the kitchen fills with a warm, earthy aroma. A can of creamy coconut milk goes in, followed by bruised lemongrass and sliced galangal.
