The key to this salad is the tempeh — marinate in tamari, then into a hot pan until it caramelises and snaps. That bittersweet crust is the difference between tempeh you like and tempeh you love. The edamame are soft and fresh, a lovely contrast to the crispy tempeh. Spinach, half-moon cucumber and grated carrot provide colour and texture.
