Instructions
- 1 Prick the eggplants with a fork and grill directly over a gas flame or under the oven broiler at 220°C until the skin is charred all around and the flesh is soft (15-20 minutes, turning regularly). Let cool for 10 minutes, peel off the skin and roughly chop the flesh.
