Instructions
- 1 Preheat the oven to 190°C top/bottom heat and line a baking sheet with parchment paper.
- 2 Place the eggplant slices on the baking sheet. Brush them with 1.5 tbsp olive oil and sprinkle with sea salt and half the black pepper.
- 3 Roast the eggplant for 15 minutes at 190°C until the slices are tender and lightly golden.
