Korean sushi variant with grilled chicken breast, carrot, cucumber and spinach in roasted seaweed. Seasoned with sesame oil and soy sauce — perfect on the go.

Kimbap is what Koreans take to picnics, work or school — always in a plastic container, always cut into perfect rounds. The difference from sushi: the rice is mixed with sesame oil instead of vinegar, giving a nutty warmth. The chicken goes briefly on the grill until just done, sliced thin so each roll gets an even filling. Spinach is blanched and firmly squeezed — too much moisture is kimbap's enemy. The carrot is briefly sautéed for a bit of sweetness, the cucumber stays raw for freshness. Rolling takes practice: not too much filling, the rice thin and even, press firmly with the bamboo mat.
