A fluffy frittata made from six egg whites, filled with spinach, red bell pepper and crumbled goat cheese. Twenty minutes in the oven and you have a golden brown breakfast you can also take cold on the go.

You beat the egg whites until just foamy — light, almost like cream that hasn't quite stiffened yet. In the pan the pepper and onion are already sizzling softly, and as soon as the spinach goes in the kitchen smells of roasted vegetables and butter. You pour the egg white mixture over in one motion; it creeps between the vegetables and starts to set at the edges immediately. The crumbled goat cheese you scatter like snowflakes on top. Then into the oven. A quarter of an hour later you pull out a firm, golden brown whole that puffs up just slightly in the middle. It cuts like a pie, with the soft goat cheese that has turned warm and creamy. Perfect warm, but also cold from the fridge the next day — the flavor is even slightly more concentrated then.
