- Now at its best: Pumpkin Seeds
A hearty bowl with crispy tamari-fried tempeh, massaged kale, fluffy quinoa and creamy avocado. Sesame oil and garlic add depth, pumpkin seeds provide extra crunch.
The scent of sesame oil and garlic hits you the moment the tempeh sizzles in the pan. Golden-brown and crispy on the outside, soft and nutty within — the tamari marinade gives each strip a deep, salty umami layer. Next to it sits the kale, dark green and glossy from the lemon massage, still with a slight bite. The quinoa underneath is light and fluffy, a neutral base that lets all flavors speak. Slices of avocado — creamy, almost butter-soft — lie like crescents across the whole. Pumpkin seeds provide a final crack with every bite. This isn't a polite little bowl: it's hearty, full of texture contrast, and tastes like something you'll genuinely want to sit down for.

Nutritional Synergies
This recipe combines ingredients that enhance each other:
Fat increases absorption of quinoa's fat-soluble vitamins
Technical: Quinoa contains vitamin E (2.4mg/100g), beta-carotene and other carotenoids that are fat-soluble. Avocado contains 15g healthy fats that stimulate micelle formation in the gut and increase absorption of these vitamins by 3-5x. Avocado also provides extra potassium (485mg).
What does this mean for you? Add avocado to your quinoa salad or bowl. This increases not only satiety through the fats but also nutrient absorption.

Fermented soy isoflavones + sesamol for antioxidant protection
Technical: Tamari contains fermentation-released isoflavones (genistein, daidzein) that work synergistically with sesame oil's sesamol and sesaminol. Together they provide broader antioxidant protection via different radical scavenging mechanisms.
What does this mean for you? A splash of tamari with sesame oil as dressing or stir-fry sauce gives not only umami flavor but also a double antioxidant effect.

Minerals improve flavor perception and electrolyte balance
Technical: Sea salt contains trace minerals (magnesium, potassium, calcium) besides sodium. Tomato is rich in potassium (237mg/100g) and lycopene. Avocado adds magnesium (29mg) and potassium (485mg). Together they form a broad electrolyte profile: sodium (salt) + potassium (tomato/avocado) + magnesium (avocado) — essential for fluid balance and nerve function.
What does this mean for you? Sprinkle tomato and avocado with a pinch of sea salt. This is more than flavor — the minerals complement each other for a complete electrolyte balance.
