The oven does the work here. Thin zucchini slices slowly crisping on a baking sheet, the edges turning golden brown while the za'atar releases its warmth into the kitchen. That scent of roasted garlic and thyme drifting through the house. After half an hour you pull them out — they're not thick and greasy like fried snacks, but thin and brittle, with that satisfying crack when you break them. The za'atar gives each chip a layer of Middle Eastern flavor — sesame, thyme, sumac. A pinch of sea salt that sharpens the flavors. You start by picking one up to taste.
