The blueprint of a Twix — biscuit, caramel, chocolate — rebuilt. The biscuit is an oat base made only from oats, coconut oil, a little honey and salt (no wheat flour, no butter). The caramel is a date-peanut-butter paste (no glucose syrup, no invert sugar, no condensed milk). The chocolate top is dark chocolate ≥ 70% with a little coconut oil for an even layer. The result looks and tastes familiar, but is made from seven recognisable whole ingredients.
Why better: Oats are naturally rich in beta-glucan, a soluble fibre: the consumption of oat beta-glucans contributes to the maintenance of normal blood cholesterol at a daily intake of at least 3 g of oat beta-glucans (EU 432/2012). One bar provides around 0.5 g of oat beta-glucan — a meaningful contribution to the daily target, without reaching the threshold on its own. Peanuts and peanut butter are naturally high in protein (per USDA around 25 g of protein per 100 g of peanuts and around 22 g per 100 g of natural peanut butter); proteins contribute to a growth and a maintenance of muscle mass (EU 432/2012). Dark chocolate from 70% cacao is, per USDA, a source of magnesium (around 228 mg per 100 g); magnesium contributes to normal energy-yielding metabolism, to normal muscle and nervous-system function and to the reduction of tiredness and fatigue (EU 432/2012). Dates provide readily available carbohydrates plus around 7 g of fibre per 100 g (USDA); together with the protein and fat from peanut butter, this produces a more gradual glycaemic response than pure sugar caramel (mixed-meal GI effect; Atkinson et al. 2008, Diabetes Care).

Instructions
- 1 Preheat the oven to 175°C (fan) and line a 20x20 cm square baking tin with parchment paper, letting it overhang on two sides.
- 2 In a bowl, mix the oats with 40 g of melted coconut oil, the honey, a quarter teaspoon of sea salt and the vanilla extract until the mixture has a wet-sand texture that holds its shape when squeezed.
