Hobak juk is a Korean congee of pumpkin and sticky rice, soft and comforting. Pumpkin provides a naturally sweet, creamy base. Traditionally eaten as recovery food during illness or fatigue.
The pumpkin goes into the water first — cubes that slowly soften and fall apart into a golden-yellow mass filling the entire kitchen with a warm, earthy aroma. After blending it becomes a smooth, velvety soup through which the sticky rice cooks until thick, slow bubbles appear on the surface. The stirring is meditative: the wooden spoon draws slow trails through the increasingly thick porridge.
