Roasted cauliflower blended with tahini, lemon juice, garlic and cumin into a velvety dip, served with crunchy cucumber, carrot and celery sticks.

Hummus without a chickpea in sight — yet you can barely taste the difference. The cauliflower goes into the oven first, where it softens and caramelises lightly at the edges. That nutty, almost sweet character blends with the bitterness of tahini and the sharpness of raw garlic. A generous squeeze of lemon juice opens everything up.
