What is this ingredient?

Tamarind (Tamarindus indica) is a tropical pod fruit with sticky pulp that tastes sour, sweet and deeply fruity. The pulp has been used for centuries in Asian, African and Latin American cuisines, from chutneys and curries to drinks, marinades and sauces.

Its flavor comes mainly from natural organic acids, including tartaric acid. Tamarind also contains fiber, minerals such as potassium and magnesium, and several polyphenols such as proanthocyanidins. Research on tamarind mainly looks at the composition of these plant compounds, antioxidant capacity in laboratory models and how extracts behave in preclinical studies.
