What is this ingredient?
Greek yogurt is traditionally made by straining yogurt through cloth for several hours, allowing whey (lactose serum) to drain and creating a thicker, creamier texture. This straining process concentrates protein (10-20 g/100 g compared with 3-6 g in regular yogurt) and naturally contains less lactose than regular yogurt. Fermentation by Streptococcus thermophilus and Lactobacillus bulgaricus produces lactic acid, which coagulates milk proteins and creates the familiar fresh, mildly tangy flavor. Products with live cultures provide bacterial cultures that are studied in relation to digestion, microbiome composition and lactose tolerance. Full-fat versions also contain milk-fat components such as CLA, while low-fat versions are useful when you want a protein-rich choice with less fat. Greek yogurt works well in breakfast bowls, sauces, marinades, smoothies and simple snacks.
