Beef brisket is a connective tissue-rich cut from the chest muscle of the cow. Because it contains firm muscle fibers, fat and collagen, it needs slow cooking at a low temperature. During slow cooking, collagen converts into gelatin, giving the meat a juicier, softer texture.
