Sturdy no-bake bars of oats, almond butter and dark chocolate with pumpkin seeds, chia seeds and hemp seeds. The recipe makes 6 bars (2 servings of 3 each). Perfect on-the-go or as a snack, keeps up to a week in the fridge.

It starts with the chocolate. Break the dark pieces into a small bowl, melt them slowly au bain marie, and let the aroma fill the kitchen. In another bowl go oat flakes, pumpkin seeds, chia seeds and coconut flakes — still dry, gritty when you drag a spoon through. Then the almond butter, the honey, and finally that warm stream of melted chocolate. Everything mixes into a dark, sticky mass that you press into a parchment-lined pan. Press firmly, because the flatter they are, the better they cut later. An hour in the fridge and they are rock hard, but the moment you bite they tear just right: grainy from the oats, crunchy from the pumpkin seeds, and then that dark chocolate layer melting slowly on your tongue.
