Mujadara is comfort in its purest form. A pot of lentils and rice, nothing spectacular on paper, but at the table it disappears in silence. The secret lies in the onions. Four of them, thinly sliced, half an hour in olive oil on low heat until they become ink-dark and papery, sweet and bitter at once. Those go on top of the steaming lentil-rice, which is soft and lightly nutty from the cumin and a hint of cinnamon. No garnishes needed. A bit of yoghurt on the side if you like, a simple salad, that's it. This is the kind of food Lebanese grandmothers don't need a recipe for — it's in the hands, in the patience, in knowing when the onions are just right.
