That practical "one-hand-in-the-bag" snack feel of chocolate-coated nuts — but built from three whole ingredients: almonds, pure cacao and coconut. The almonds are briefly toasted, coated while still warm in a thin layer of honey and coconut oil, then rolled in cacao powder and shredded coconut for a matte, almost "candy-coated" finish without a sugar shell.
Why better: No refined sugar, no colourings, no milk powder, no palm oil. Almonds are a natural source of vitamin E, magnesium and monounsaturated fatty acids; vitamin E contributes to the protection of cells from oxidative stress and magnesium contributes to normal functioning of the nervous system and to normal psychological function (EU 432/2012). Instructions
- 1 Toast the almonds for 8-10 minutes in a dry pan over medium heat, shaking regularly, until just light brown and fragrant. Transfer them off the pan onto a plate as soon as they're ready — a hot pan keeps toasting for several more minutes.
- 2 In a small pan over low heat, warm the honey with the coconut oil for 1-2 minutes until both are just melted and fluid. Do not let it boil — that turns the honey bitter and brittle.
