Ultra-creamy chocolate fudge without butter or refined sugar — built on ripe avocado, raw cacao and honey

  • Now at its best: Honey

Dark, creamy chocolate squares in which two ripe avocados take the role of butter. Raw cacao provides the full chocolate flavour, honey the mellow sweetness and a pinch of sea salt the depth. Nobody tastes the avocado — but you feel the texture: dense, creamy and right on the line between fudge and truffle. Ready in two hours in the fridge.

Replaces: classic butter-and-cream fudge with sugar, chocolate truffles made with palm fat, bakery brownie bites

The feel of a classic chocolate fudge — dense, melting, deep cacao-black — but rebuilt. The butter of traditional fudge is replaced by the flesh of two ripe avocados (per USDA rich in monounsaturated fats), the sugar syrup by honey and a little melted coconut oil carries everything to a rich gloss. The avocado gives a buttery mouthfeel without any green taste coming through; raw cacao carries the full chocolate charge.

Why better: Avocados are naturally rich in monounsaturated fatty acids (per USDA around 10-12 g MUFA per 100 g); replacing saturated fats with unsaturated fats in the diet contributes to the maintenance of normal blood cholesterol (EU 432/2012). Raw cacao powder is, per USDA, a source of magnesium (around 500 mg per 100 g); magnesium contributes to normal energy-yielding metabolism, to normal muscle and nervous-system function, to normal psychological function and to the reduction of tiredness and fatigue (EU 432/2012). Avocado also provides vitamin E (around 2 mg per 100 g, per USDA); vitamin E contributes to the protection of cells from oxidative stress (EU 432/2012). A single square is intentionally small (around 85 kcal): meant as a deliberate after-meal dessert, not a daily snack.

This recipe combines ingredients that enhance each other:

MCTs increase flavonoid absorption from cacao

Fats increase bioavailability of cocoa flavanols (PMID: 19628108)

Technical: Cacao contains flavanols (epicatechin, catechin) that are fat-soluble. Coconut oil contains 60% MCTs (Medium Chain Triglycerides) that are quickly absorbed and increase the absorption of polyphenols from cacao. MCTs go directly to the liver and are converted to ketones, while flavanols remain available.

What does this mean for you? Add a teaspoon of coconut oil to your hot cocoa or use it in chocolate recipes. This increases not only the creamy texture but also the bioavailability of cacao flavonoids.

MCTs protect honey enzymes — complementary bioactive compounds

Technical: Coconut oil contains lauric acid (48%), a medium-chain fatty acid (MCT). Honey contains glucose oxidase producing hydrogen peroxide. Together they provide complementary bioactive compounds. MCTs also help preserve fat-soluble compounds in honey.

What does this mean for you? Combine coconut oil with honey in energy balls, granola or as coating for snacks. The combination is both flavorful and functional.

Vanillin enhances chocolate flavor perception

Technical: Vanillin (the main aroma molecule in vanilla) binds to the same olfactory receptors as chocolate aromatics (pyrazines, Maillard compounds). This enhances perceived chocolate flavor without extra sugar or cocoa. Research shows vanillin increases sweetness perception by 10-15%, requiring less sugar.

What does this mean for you? Add vanilla extract to chocolate baking or hot chocolate. You need less sugar because vanilla enhances the chocolate flavor and sweetness.

Vanilla Extract Vanilla Extract Honey Honey

Vanillin antioxidant + honey enzymes for aroma and well-being

Technical: Vanilla extract contains vanillin (1-2%) — a powerful antioxidant 5x stronger than vitamin C in DPPH assay. Vanillin also has anxiolytic action via GABA-A receptor modulation and inhibits MAO-B (mood improvement). Honey's enzymes and prebiotic FOS enhance the well-being effect: gut bacteria produce 90% of serotonin. The combination is aromatic (vanillin + honey flavors) and therapeutic (antioxidant + prebiotic + anxiolytic).

What does this mean for you? Add a few drops of real vanilla extract to warm honey milk or tea. The vanilla calms your nervous system, the honey feeds your gut bacteria that produce serotonin — comfort food at a molecular level.

Minerals improve flavor perception and electrolyte balance

Technical: Sea salt contains trace minerals (magnesium, potassium, calcium) besides sodium. Tomato is rich in potassium (237mg/100g) and lycopene. Avocado adds magnesium (29mg) and potassium (485mg). Together they form a broad electrolyte profile: sodium (salt) + potassium (tomato/avocado) + magnesium (avocado) — essential for fluid balance and nerve function.

What does this mean for you? Sprinkle tomato and avocado with a pinch of sea salt. This is more than flavor — the minerals complement each other for a complete electrolyte balance.

Instructions
  1. 1 Line a 15x15 cm square tin with baking paper, letting the paper overhang on two sides — this makes the fudge easy to lift out later.
  2. 2 Halve the avocados, remove the pits and scoop the flesh with a spoon into a food processor or high-speed blender. Cut away any brown spots first for a clean flavour.
