Vanilla nice cream built on four ingredients: cashews soaked for four hours that take the role of cream, frozen slices of ripe banana for natural sweetness and texture, a splash of full-fat coconut milk for gloss and real vanilla for depth. No ice cream machine, no condensed milk and no granulated sugar. Straight from the blender it has a soft-serve texture; two hours in the freezer gives a firmer scoop.

The dairy cream is replaced by cashew cream (soaked cashews blended to a soft, fatty base), the granulated sugar by the natural sugars of very ripe banana and the stabilisers simply by freezing.
