What is this ingredient?
Kecap manis ('sweet sauce' in Indonesian) is a syrupy, caramel-like soy sauce. It is made by cooking soy sauce with palm sugar until a thick, glossy syrup forms.
## Fermentation & Maillard reaction products
Like regular soy sauce, kecap manis contains melanoidins that form during fermentation, heating and caramelization. Yamamoto et al. (2008) described these Maillard reaction products in various soy sauces, especially in relation to color, aroma and the chemical composition of fermented sauces.
## High sugar and sodium content
With ~65 g sugar and 4400 mg sodium per 100 ml, kecap manis is a concentrated seasoning to use in small amounts. A typical 1-2 tablespoon portion provides far less than 100 ml, but it is still distinctly sweet and salty.
## Palm sugar vs. regular sugar
Traditional kecap manis uses palm sugar (gula jawa), which brings a dark caramel taste and small amounts of minerals. It remains, however, a concentrated sugar source and is mainly used for flavor, gloss and balance in dishes.

Melanoidins in kecap manis
Melanoidins formed during kecap manis production are studied as Maillard reaction products that contribute to color, aroma and the dark syrupy style of fermented soy sauces. Research specifically on kecap manis remains limited.
