- Now at its best: Tomato
A Mediterranean wrap with crispy falafel, creamy hummus, fresh vegetables and tahini sauce. Plant-based, protein-rich and full of fiber. Perfect for lunch or as a grab-and-go meal.
The falafel is the first thing you smell. That warm, spiced scent of cumin and coriander, with a hint of garlic. Golden brown, crispy on the outside — you press gently and feel the crust give way. Inside: green, herby, moist. The hummus is already spread on the tortilla: creamy, thick, with that typical chickpea aroma you recognize but can never quite name. Tomato in cubes, cucumber in half moons, red onion in thin rings that still have a little bite. Parsley on top — a lot, not as garnish but as ingredient. The tahini sauce drizzles over: thin, light brown, a touch of lemon in it. Roll up. The first bite combines everything at once: the crispy crust of the falafel breaks, the hummus fills the gaps, the tomato releases juice, the tahini ties it together. This is street food at its best. No frills, no pretense, just good.

Nutritional Synergies
This recipe combines ingredients that enhance each other:
Complete protein through chickpea + sesame + wheat
Technical: Falafel (chickpeas) lacks the essential amino acid methionine. Tahini (sesame) and wheat (whole wheat pita) are rich in methionine. Together they form a complete protein profile with all 9 essential amino acids — comparable to animal protein but plant-based. This principle is called 'protein complementarity'.
What does this mean for you? Always eat falafel with tahini and pita — not just delicious but also a complete plant protein. Middle Eastern cuisine discovered this centuries ago.
